Ingredients

  • 4 cups dark sweet cherries
  • 1 & 1/4 cup cane sugar
  • 1/3 cup all purpose flour unbleached & organic
  • 1/4 tsp almond extract

Instructions

  • Start by preparing your pie crust of choice (I use the recipe in this post).
  • Preheat the oven to 425 and line a pie dish with half of the pie crust dough.
  • In a pan on the stove, mix together the cherries, sugar, flour, and almond extract. Cook for 10-12 minutes until the mixture is thick and bubbling.
  • When the cherry mix thickens, remove from heat and let it cool. Then pour it into the pie dish and roll out the remaining dough and cover the cherry mixture completely.
  • Slice 5-6 small slits in the pie crust top to allow for air flow when cooking.
  • Bake the pie for 15 minutes at 425 then lower the heat to 350 and bake for another 30 minutes.
  • When the top has begun to brown, remove and let the pie cool slightly. You can serve slightly warm or wait to serve completely cool! Whichever it is, enjoy :)
