Chocolate covered peanut butter stuffed dates
Delicious chocolate covered dates stuffed with crunchy peanut butter. This healthy snack recipe is perfect for pre-workouts, afternoon snacking or for a sweet dessert. It's a nutritionally diverse treat that everyone will love!

Servings: 6 dates
- 6 organic medjool dates pitted prefered
- 1/4 cup crunchy peanut butter sub almond butter/sunflower butter
- 3/4 cup semi-sweet chocolate
- 1 pinch sea salt to taste
Begin by slicing open the dates long-ways and place onto a piece of parchment paper (pitted dates will be pre-sliced).
Using a small spoon, fill the dates with the peanut butter and fold closed then repeat until all dates are filled.
In a microwave safe bowl or mug, melt your chocolate in increments of 20-30 seconds - stirring in between. You can utilize 1 tsp of coconut oil for thinner chocolate if desired.
Dip each of the dates into the melted chocolate and place back onto the parchment paper. Sprinkle with sea salt to taste!
Place the dates in the refrigerator for about 15 minutes or until the chocolate has hardened. Enjoy right away or store in the freezer for up to 18 months!
