Almond butter is arguably the best butter out there. The nutty, sweet flavor is incredibly tasty on bananas, in oat bowls and smoothies, and most importantly with desserts! One of the benefits of almond butter is that it’s packed with vitamins, nutrients, and healthy fats. If you love almond butter as much as me, any recipe with almond butter is good to try, but this one is a MUST.
This recipe was created after many attempts trying to find the best cookie for my post lunch/pre-workout snack. I love to have something sweet around 2 o’clock, but don’t love sugary, chocolatey treats at that time of the day. My goal was to use nutritious ingredients that would give me the energy I need, but still satisfy my sweet tooth.
These cookies are made with almond butter and almond flour which gives them a perfectly crunchy but smooth texture. Sweetened with maple syrup and vanilla, they’re subtly sweet and perfect with a warm cup of coffee.
Funny enough, the first time I baked these cookies I tried one fresh from the oven and honestly didn’t love them. Then 2-3 hours later, my boyfriend tried one and loved it! Confused, I gave them another try and WOW, I loved them too. It was a totally different experience when the cookies had time to cool completely. Now these cookies are one of my favorite recipes to bake and store in the freezer for any time I need one.
Ingredients:
- Almond butter – Creamy almond butter will work better than crunchy!
- Unblanched almond flour: For sulfite-free, I use unblanched flour. I’ve had trouble finding organic unblanched or even organic blanched flour, but this has been safe for me.
- Natural maple syrup
- All natural vanilla
- Baking soda
How to Make the Almond Butter Cookies:
These simple, 5 ingredient almond butter cookies are also very easy to make! You’ll need 1 bowl, a baking sheet & parchment paper, and a large spoon.
Start by preheating the oven to 375 and lining the baking sheet with parchment paper. Then mix all the ingredients in one bowl until well combined. The cookie dough will be thick and roll-able. When mixed, scoop out dough (around 1 tablespoon in size) and roll into balls. Place onto the cookie sheet. If you’d like to add a chocolate morsel, press one down into the center of the dough ball before baking.
Bake the cookies for 12 minutes. When they’re done, they should be flat and slightly brown on the edges. Place them on top of the oven and let them cool for at least 15-20 minutes. To help speed up the cooling time, I take the baking sheet off of the oven and place it on a hot pad on the counter. Once cooled, your cookies are ready to serve and enjoy!

Healthy 5 Ingredient Crunchy Almond Butter Cookies
Ingredients
- 1 cup Almond flour
- 1/3 cup Maple syrup
- 1/4 cup Almond butter
- 1/2 tsp Vanilla
- 1/2 tsp Baking soda
- 1 handful Dark chocolate morsels optional
Instructions
- Preheat the oven to 375 and prepare a baking with parchment paper.
- Mix all ingredients in one bowl then scoop out balls that are 1 tablespoon in size, roll into balls, and place onto the baking sheet.
- Bake for 12 minutes until the cookies begin to brown and have flattened entirely.
- Take the cookies out of the oven, let them cool COMPLETELY then serve and enjoy!
