Why Almond Butter Copycat “Reese’s”?
With a sulfite allergy, I’ve found that I react to peanuts even when they are organic and minimally processed. They fall into the category of fermented foods that can have naturally occurring sulfites. For this reason, I avoid them all together and instead rely on almond butter or sunflower seed butter as delicious substitutes.
Ingredients
- Natural almond butter
- Organic oat flour: For my oat flour, I typically blend rolled oats – but I use store bought as well
- Organic maple syrup
- Natural vanilla
- Sea salt
- Semi sweet or dark chocolate
- Optional: Organic coconut oil, butter or another oil for melting purposes
Making your homemade candy
These chocolate covered almond butter candies are relatively easy to make. They take about 30 minutes total, including the freezing time and cooling time. All you need to make these is parchment paper, a cookie sheet, rolling pin, one large bowl, a microwave safe bowl, cookie cutters in any shape, and a few spoons and other standard baking utensils.
Start by lining a cookie sheet with parchment paper, then mix all the ingredients (except the chocolate and coconut oil) in one bowl. When well combined, roll the dough out onto a flat surface until it is 1/4″-1/2″ thick. Then use the cookie cutter shape of your choice and cut the dough into shapes, placing them onto the parchment paper as you go. When finished, place the dough pieces into the freezer and begin to melt the chocolate and coconut oil in the microwave.
When the chocolate is melted entirely, take out the almond butter dough shapes and coat each in the chocolate. Place on the parchment paper and repeat until all are covered. Then when the chocolate is almost fully dry, use a small spoon or fork to drizzle chocolate on top of the shapes. Let the chocolate dry completely then enjoy!
