Chocolate Covered Stuffed Dates

This is one healthy snack recipe that will keep you coming back for more.
Why Dates?
Medjool dates are a naturally sweet fruit that are rich in fiber, antioxidants and potassium. They support digestive health and may also support brain/heart health. Dates are a well-rounded, minimally processed energy booster that can serve as a satisfying snack. Best of all, dates can be an indulgence. They have a sticky texture paired with the sweetness that can make you feel as though you’re eating candy!
I personally order organic medjool dates from Thrive Market but you can locate dates in most grocery stores. Some will come pitted (pit is removed before packaging) and some will have the pit inside that needs to be removed at home before eating. Regardless of the product type, any date can be delicious as a standalone treat or “dressed up” like these peanut butter stuffed ones. If you haven’t given dates a try yet – it’s never too late.
Ingredients for Stuffed Dates:
- Pitted medjool dates
- Crunchy peanut butter
- Semi sweet chocolate chips
- Sea salt
- Optional: coconut oil to thin melted chocolate
Stuffed dates are very easy to customize so if you don’t love peanut butter or prefer dark chocolate – no big deal! Some common swaps/additions include:
- Almond butter, sunbutter or tahini for the filling
- Dark chocolate for coating
- Add/remove sea salt or top with things like nuts, hemp seeds or crushed pretzels
- Coating only the top with chocolate or drizzling the chocolate on top is also a great option


Making Chocolate Covered Stuffed Dates
Good news: it’s incredibly easy to make stuffed dates! They take about 5-10 minutes to prep then 10-15 minutes in the refrigerator to allow the chocolate to harden. Quick & efficient snack prep if you ask me!
Begin by lining a baking sheet or large plate with parchment paper. If your dates have pits, slice them open longways on one side and remove the pits. If you have pitted dates, there should be a pre-cut opening to the dates where you can pull them apart. Remember not to slice or pull the dates fully in half because you want to create a “bowl” for the filling.
After opening the dates and placing them onto the parchment paper, use a small spoon to fill each date with peanut butter. Then close the date around the peanut butter. In a microwave safe bowl or mug, melt the chocolate in 20-30 second increments. If you prefer to have a thinner chocolate, you can mix in 1 teaspoon of coconut oil. Once the chocolate is melted, use a spoon to dunk the dates into the chocolate (one by one) until fully covered and place them back on the parchment paper. Top with sea salt then place into the refrigerator for 10-15 minutes or until the chocolate has hardened.

Ingredients
- 6 organic medjool dates pitted prefered
- 1/4 cup crunchy peanut butter sub almond butter/sunflower butter
- 3/4 cup semi-sweet chocolate
- 1 pinch sea salt to taste
Instructions
- Begin by slicing open the dates long-ways and place onto a piece of parchment paper (pitted dates will be pre-sliced).
- Using a small spoon, fill the dates with the peanut butter and fold closed then repeat until all dates are filled.
- In a microwave safe bowl or mug, melt your chocolate in increments of 20-30 seconds – stirring in between. You can utilize 1 tsp of coconut oil for thinner chocolate if desired.
- Dip each of the dates into the melted chocolate and place back onto the parchment paper. Sprinkle with sea salt to taste!
- Place the dates in the refrigerator for about 15 minutes or until the chocolate has hardened. Enjoy right away or store in the freezer for up to 18 months!
