Why Sunbutter?
Sunbutter and I go way back. In college, an allergist told me I was allergic to peanut butter and possibly other nuts. After eating my beloved peanut butter almost everyday of my entire life, I was distraught! It became my mission to find something that filled the gap. Luckily, my mom worked in a nut-free school and they offered the students sunbutter. My mom brought home a small sample cup for me to try and WOW…one taste of sunbutter and I was hooked.
As I would later find out, I’m not allergic to peanuts or any nuts for that matter. My reactions to peanuts are likely related to my sulfite allergy, you can read that story here. However, this is one misdiagnosis I was happy to have received because to this day, I LOVE sunbutter. And that’s what makes this recipe one of my favorites!
Homemade Granola Bars:
Once you discover the ease of making your own granola bars, you might not turn back. They’re a snack that can be made with less sugar and better ingredients than the store bought versions. For my fellow sulfite-free friends, homemade bars are the way to go!
These sunbutter granola bars have plenty of Vitamin E, healthy fats, protein, and magnesium. With all the good inside, it’s hard to believe they taste as incredible as they do. They’re also vegan, nut-free, and can be made gluten-free. If you’re looking for a sweet, salty, and textured treat that you can enjoy everyday, I’d say look no more!
Ingredients:
- Organic Sunbutter: Sunbutter brand is my go-to brand for sunbutter. For sulfite-free recipes, sunbutter should be organic and free from added salt, sugar, or oils!
- Organic rolled oats: Rolled oats will work best, but you can substitute quick oats if necessary. I use brands including Bob’s Red Mill and Nature’s Path. Use Gluten-free oats to make these bars gluten-free!
- Organic, sprouted pumpkin seeds: I’ve used GoRaw seeds or Harvested For You. You could also use sunflower seeds, but I prefer the pumpkin seeds in this recipe!
- Organic Maple Syrup
- Natural vanilla
- Sea Salt
- Dark chocolate morsels: Two brands I commonly use are Enjoy Life and Hu.
To Make:
The good news is these granola bars are SO easy to make! They require only 6 ingredients and are completely ready to eat in under 25 minutes.
Begin by lining a 6×6 tuppaware or other small container with parchment paper. It is best to use something that can be refrigerated and isn’t large. Then mix all your ingredients in a bowl until well combined. The mix will be clumping together, but not too thick it won’t spread or too runny that it won’t stick together.
Next, pour the mix into the container and press down until it is even and compact. Melt the chocolate for 30-60 seconds in the microwave and drizzle over the granola bars. Place in the refrigerator for at least 20 minutes before serving. When ready, cut the bars into 9 squares and enjoy!
Storage:
Store the sunbutter granola bars in an air container in the fridge for up to 1 week. I personally like to freeze my bars for up to 2 months! They’re debatably better when chilled and perfect for a warmer day.
