This recipe is one of my favorite meals to prep before a long week. It is a delicious version of chicken salad that uses Greek yogurt and an avocado as a base instead of mayonnaise. Mixed with the proper seasonings, the flavor is fresh but spicy making it good for any time of the year. It’s also filled with healthy fats and protein which helps keep you full for a long time!
Ingredients in this Recipe:
- Organic chicken: Can be shredded, sliced, cut into small pieces, etc. However you prefer your chicken will work!
- Organic avocado
- Whole milk, organic Greek yogurt
- Spices: I use Simply Organic brand spices and for this recipe, my favorite spices include garlic salt, onion powder, and cayenne pepper or chili powder.
- Organic cherry tomatoes: When I first started making this recipe, I didn’t add tomatoes. Now that I’ve found a love for them, I consider them a staple in this chicken salad!
What’s the Best Way to Eat this Chicken Salad?
I typically eat it for lunch or as a snack in the afternoon if I am really hungry before dinner. I like to make little sandwiches using homemade rolls or make it “taco” style with lettuce wraps or homemade jalapeno tortillas. I’ve even put it on naan bread over arugula and had a little brunch pizza! But really, I most often eat it by the spoonful right out of the fridge or on Late July tortilla chips!
If you’re making it as a sandwich, you can add arugula, more tomatoes, cheese, or other desired toppings. This could help “fluff” it up and make it even more filling. This recipe pairs really well with salty sides, so if you love chips like I do bring them out!! I’ve also grown to love this chicken salad served over arugula. It doesn’t require any dressings or added flavor, but tastes absolutely incredible.
How Long is the Chicken Salad Good For?
Kept in the refrigerator in a tightly sealed container, this chicken salad stays good for 3-4 days. If it begins to get too watery or if the avocado begins to brown, you should discard the chicken salad.
Avocado Yogurt Chicken Salad
Ingredients
- 3 cups Pulled Chicken
- 1 whole Avocado
- 1/2 cup Full Fut Greek Yogurt Organic
- 1 tsp Cayenne Pepper Chili pepper for less spice
- 1 tsp Garlic Salt
- 1 tsp Sea Salt
- 1/2 tsp Onion Powder
- 5 Cherry tomatoes Optional
Instructions
- Mash the avocado and mix with the Greek yogurt in a bowl.
- Add the seasonings to the mixture followed by the chicken and stir.
- Enjoy!!
As a note, the recipe prep time includes chicken that is pre-made. Without cooked chicken already on hand, you can add anywhere from 15 minutes (to grill) to 4 hours (for a crock pot). I don’t season the chicken prior to putting it in the chicken salad, but if you prefer to try to use sea salt, cayenne pepper, and/or garlic salt to match the flavors well!
