This mug cake is a tasty single-serve dessert that is quick and easy to make. It’s a soft, moist and fluffy cake that has a tasty vanilla flavor mixed with melted chocolatey goodness. It’s made from common household ingredients and can be prepared in about 5 minutes in a mug of your choice – hence the “mug cake” name!
Vanilla mug cakes can be topped with chocolate chips, sprinkles, fruit, and much more. But my personal favorite is to top it off with a scoop of vanilla ice cream. The warm, spongy mug cake mixed with cold, melty ice cream creates the sundae of your dreams.
Ingredients:
- All purpose flour
- Sugar
- Baking soda
- Sea salt
- Milk or almond milk
- Melted butter
- Vanilla
- Chocolate chips
Making your Vanilla Mug Cake
In a microwave safe mug, mix together the flour, sugar, baking soda and sea salt. Add in the milk, melted butter and vanilla and mix well then stir in half a handful of semi sweet chocolate chips.
Microwave the batter for ~60 to 90 seconds (will vary by microwave) until the cake has risen. It will have a spongy look and texture and will be a golden yellow color. You can check if it is fully cooked through by sticking a toothpick through the center. If it comes out clean or with a few moist crumbs then the cake is done. Carefully remove the mug from the microwave (it will be hot!) and enjoy.
Sulfite Free Tips & Tricks
While managing a sulfite sensitivity can be a challenge, being mindful of the brands/types of ingredients you are using can make a big difference. The best type of unprocessed flour is both organic and unbleached – I often use King Arthur’s. Using organic sugar, milk, and vanilla can also help you avoid sulfites and preservatives when baking or cooking. Finally, it is good to be mindful of the type of chocolate chips you use. I avoid chocolate processed with alkali and try to buy brands with simple, organic ingredients.

Ingredients
- 2 tbsp all purpose flour
- 1 tbsp cane sugar
- 1/4 tsp baking soda
- 1 pinch sea salt
- 1 and 1/2 tbsp melted butter melted
- 1 and 1/2 tbsp milk can use almond milk or regular milk
- 1/2 tsp vanilla
- 1 handful chocolate chips
Instructions
- Start by combining the flour, sugar, baking soda, and sea salt in a mug.
- Mix in the melted butter, milk and vanilla.
- When smooth, add in the chocolate chips and mix once more.
- Microwave the mix for 60-90 seconds (this will depend on the microwave strength) until the cake has risen, is a golden yellow color and has a spongy texture. You can confirm it is cooked through by sticking a toothpick into the center and ensuring it comes out without batter or only with moist crumbs.
