This month I’ve partnered up with Seawind Foods to showcase one of their incredible dried mango products! I was thrilled to discover Seawind Foods not only because they have a delicious selection of dried foods and fruits, but also because of their commitment to high-quality ingredients. They have a “True No S02TM” commitment that focuses on ensuring no sulphur dioxide / sulfites are used in the creation or storage of their dried products. The company is well educated on sulfites in food and the harmful effects they can have for those who are sensitive. It’s an impressive display of knowledge that many brands are struggling to recognize even today.
Delicious Dried Mango
If you’ve been following along on instagram, you’ve likely seen that dried mango has become a staple snack in my life. Dried mango is both filling and nutritionally dense but can really satisfy a sweet tooth. But as someone with a sulfite sensitivity, it can be challenging to find brands that are confident there are no sulfites in their products. That’s why I was so excited to discover Seawind Foods and try out their dried low sweet mango. I was blown away by the delicious lightly sweetened mango and couldn’t wait to bake this chocolate coconut granola with them!
Ingredients
- Rolled oats – organic and gluten free is the best option for sulfite sensitivities and gut health!
- Cacao powder – not processed with alkali.
- Sea salt
- Seawind Foods dried diced mango
- Chocolate chips – organic, minimal ingredients
- Coconut oil – organic and well sourced.
- Honey – organic/raw honey with no additional ingredients.
Chocolate Coconut Granola with Sulfite Free Mango
The tropical essence of mango inspired me to mix it into a coconutty, chocolatey granola. This homemade granola has a combination of rich cacao and chocolate chips that mix well with the light and sweet flavors of mango and coconut. Each bite promises a blend of textures and tastes that satisfies all your sweet, salty and crunchy needs.
Baking Homemade Granola
In my opinion, homemade granola can be a much better option than store bought! You have complete control over the ingredients and it’s most commonly a lot lower in sugar and processed oils. It’s also incredibly simple to make and can be prepped, baked, and stored in under 30 minutes!
To make the granola, start by preheating the oven to 350 degrees and lining a baking sheet with parchment paper. In a medium sized bowl, mix together all the “dry” ingredients (oats, cacao powder, sea salt, mango, and chocolate chips) until well combined. Then add in the “wet” ingredients (coconut oil and honey) and mix again until all ingredients are wet and start to clump together.
Pour the mixture onto the baking sheet and bake for 10-12 minutes or until the edges begin to brown. Then remove and let the granola cool completely. Once cool, break apart the granola with your hands or a spatula and enjoy! You can store the granola in a sealed container at room temperature for up to a week. Enjoy it in smoothies, oat bowls, as a snack and for much more!
Chocolate Coconut Granola with Sulfite Free Mango and Chocolate Chips
Ingredients
- 1 cup rolled oats
- 1 tbsp cacao powder not processed with alkali
- 1/2 tsp sea salt
- 3 tbso Seawind dried and diced mango
- 1/4 cup chocolate chips
- 2 tbsps melted coconut oil
- 2 tbsps honey
Instructions
Making the Granola
- Start by preheating your oven to 350 degrees and lining a baking sheet with parchment paper.
- In one medium sized bowl add in the oats, cacao powder, sea salt, mango, and chocolate chips. Mix until all ingredients are well combined.
- Add in the melted coconut oil and honey then mix again until all ingredients are wet and begin to clump together.
- Pour the mixture onto the baking sheet and flatten using a spoon or your hands. It should be around 1/2" thick – but does not need to be super accurate.
- Bake for 10-12 minutes or until the edges of the granola begin to brown. Then remove from the oven and let it cool entirely.
- Once cool, break apart the granola with your hands, a spatula, or other tool and enjoy!
Storage
- Store granola in an airtight container at room temperature for up to a week!
Bonus Snack Idea: Chocolate Covered Dried Mango
In addition to delicious chocolate coconut granola, you can try Seawind Foods’ dried mango strips dipped in rich dark chocolate.
